Caprese Pasta Salad

A refreshing pasta salad with tomatoes, mozzarella, and basil, dressed in a balsamic vinaigrette.
Ingredients:
- pasta (penne or rotini) - 225 grams (8 ounces)
- cherry tomatoes, halved - 400 grams (2 cups)
- fresh mozzarella, cubed - 225 grams (8 ounces)
- fresh basil leaves, chopped - 12 grams (0.5 cup)
- olive oil - 60 milliliters (0.25 cup)
- balsamic vinegar - 30 milliliters (2 tablespoons)
- garlic, minced - 2 cloves (2 cloves)
- salt - 2.5 grams (0.5 teaspoon)
- black pepper - 1 gram (0.25 teaspoon)
Instructions:
- Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and basil.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat evenly.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes:
You can add other ingredients like sliced red onions or pine nuts for extra flavor and crunch.
