A refreshing pasta salad with tomatoes, mozzarella, and basil, dressed in a balsamic vinaigrette.

Ingredients:

  • pasta (penne or rotini) - 225 grams (8 ounces)
  • cherry tomatoes, halved - 400 grams (2 cups)
  • fresh mozzarella, cubed - 225 grams (8 ounces)
  • fresh basil leaves, chopped - 12 grams (0.5 cup)
  • olive oil - 60 milliliters (0.25 cup)
  • balsamic vinegar - 30 milliliters (2 tablespoons)
  • garlic, minced - 2 cloves (2 cloves)
  • salt - 2.5 grams (0.5 teaspoon)
  • black pepper - 1 gram (0.25 teaspoon)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, mozzarella, and basil.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to coat evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes:

You can add other ingredients like sliced red onions or pine nuts for extra flavor and crunch.
