Quinoa Salad

A nutrient-packed salad with quinoa, vegetables, and a zesty lemon dressing.
Ingredients:
- quinoa - 170 grams (1 cup)
- cucumber, diced - 1 cucumber (1 cucumber)
- cherry tomatoes, halved - 200 grams (1 cup)
- red onion, diced - 0.5 onion (0.5 onion)
- feta cheese, crumbled - 60 grams (0.5 cup)
- fresh parsley, chopped - 15 grams (0.25 cup)
- lemon juice - 45 milliliters (3 tablespoons)
- olive oil - 30 milliliters (2 tablespoons)
- salt - 2.5 grams (0.5 teaspoon)
- black pepper - 1 gram (0.25 teaspoon)
Instructions:
- Cook the quinoa according to package instructions, then let it cool completely.
- In a large bowl, combine the cooked quinoa, diced cucumber, cherry tomatoes, red onion, feta cheese, and chopped parsley.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
- Pour the dressing over the quinoa mixture and toss to combine.
- Taste and adjust the seasoning as needed.
- Serve the quinoa salad chilled or at room temperature.
Notes:
For added protein, you can include grilled chicken or chickpeas in the salad.
