A nutrient-packed salad with quinoa, vegetables, and a zesty lemon dressing.

Ingredients:

  • quinoa - 170 grams (1 cup)
  • cucumber, diced - 1 cucumber (1 cucumber)
  • cherry tomatoes, halved - 200 grams (1 cup)
  • red onion, diced - 0.5 onion (0.5 onion)
  • feta cheese, crumbled - 60 grams (0.5 cup)
  • fresh parsley, chopped - 15 grams (0.25 cup)
  • lemon juice - 45 milliliters (3 tablespoons)
  • olive oil - 30 milliliters (2 tablespoons)
  • salt - 2.5 grams (0.5 teaspoon)
  • black pepper - 1 gram (0.25 teaspoon)

Instructions:

  1. Cook the quinoa according to package instructions, then let it cool completely.
  2. In a large bowl, combine the cooked quinoa, diced cucumber, cherry tomatoes, red onion, feta cheese, and chopped parsley.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
  4. Pour the dressing over the quinoa mixture and toss to combine.
  5. Taste and adjust the seasoning as needed.
  6. Serve the quinoa salad chilled or at room temperature.

Notes:

For added protein, you can include grilled chicken or chickpeas in the salad.
